Right now, with the quarantine/stay at home order, we are cooking a lot more meals and needing to find ways to use all the food we have. This chicken dinner is really easy and can be modified in a lot of ways to fit your style. You can add vegetables or use different kinds of meat, cheese, and milk. I have two toddlers and they both love this meal too!
Baking time: 1 hour. Serves 2-3
Ingredients:
1 package Julienne potatoes (We used Betty Crocker)
2 1/2 cups boiling water
2/3 cup milk (We use unsweetened almond milk)
1 1/2 cups diced, cooked chicken (you can use chicken, ham, or turkey)
1 cup shredded cheese ( we use whatever we have. This time was 1/2 cheddar and 1/2 Mexican )
1/2 cup plain bread crumbs
Directions
- Heat oven to 400º. Stir together potatoes, sauce mix, and boiling water in an ungreased casserole dish. Stir in milk, chicken, and cheese.
- Bake uncovered for 50 minutes. Sprinkle breadcrumbs over the top and bake for another 10 minutes.
This dish also goes great with asparagus. Take fresh asparagus and trim the bottoms. Put them on a cookie sheet with a drizzle of oil and a little salt and pepper. Roll them around to coat. Sprinkle some breadcrumbs over the asparagus and bake for the last 10-14 minutes with the casserole.
I have one of the pickiest eaters in the world, but he loves all of these things! I will have to try this out and see how he likes it! Thanks for the simple idea!
