Sean and I love going out to fondue for special occasions and are favorite cheese fondue is Brie and Gorgonzola. I thought we could try to make it at home for Valentine’s Day this year because we could do it with the kids. I made it differently than the restaurant, but it was really easy and a lot of fun. We got a lot of things to dip into the cheese too like apples, french bread, and a couple different kinds of sausage.

Here’s the recipe:

1 1/2 tsp olive oil

1 shallot, minced

1 1/2 Tbsp flour

12 ounces brie cheese, cut into cubes

6 ounces gorgonzola cheese, crumbled

1 cup dry white wine (I used Barefoot Sauvignon Blanc)

1 loaf french bread cut into cubes and any other items you would like to dip such as sliced apples, broccoli or cauliflower, sausage slices (we used smoked beef sausage and chicken apple sausage)

Directions:

  1. Heat olive oil on skillet over medium-high heat and add shallots. Cook until tender, about 2 minutes
  2. Place flour in bowl and add cubed brie cheese and the gorgonzola crumbles. Toss to coat.
  3. Pour wine in saucepan and bring to simmer over medium heat. Add cheese and stir until melted.
  4. Stir in the shallots and add ground pepper to season if you like. Serve warm and start dipping.

Modifications you could make: You could use less gorgonzola if you prefer. Another option would be to add mushrooms. You could slice them and sauté with the shallots.
